Spicy Ginger Pork Chops

Quick and easy recipe to make your pork chops burst with flavour.
Ah, Smoker Sunday is here again! Time to think about the week coming and what we can pre-smoke to have meals ready to go throughout the week. If you are like me I go down the rabbit hole of online blogs and smoker forums weekly, if not daily. Once you purchase a smoker, start using it and figure out how to do it properly. You will find yourself addicted to trying new recipes or just recreating ones you have already made and loved.
Spicy Ginger Pork Chops, really not that spicy at all but full of flavour and delicious. This quick and easy recipe takes a 24 hours marinade on this beautiful home grown pork so delicious you will want to make it again.

This pork chop recipe, no matter where you got your chops from, will help take the taste and tenderness of this meat to the next level. Using a sauce we found in South East Asia, that is now a staple in our home we made these delicious chops.
Your Ingredients

2 pork chops
2 tbsp of ABC Original Chili Sauce
1/2 cup of Canada Dry ginger ale
1 tbsp of seasoning salt
1 tbsp of garlic powder
1 tbsp ground ginger
1/4 cup of honey
Prep time: 10 minutes
Marinate time: 24 hours
Smoker time: 3 hours
BBQ time: 10 minutes - direct on grill

Step 1: Let’s Get Started
Take your pork chops out of the freezer and let them thaw (fully thawed or half thawed). In a plastic container mix the Canada Dry Ginger Ale and honey. On the pork chops sprinkle the ground ginger, garlic powder and seasoning salt on both sides. Then rub the ABC Original Chili Sauce over the seasoning and on both sides of the pork chops. Place them in the container once this is done. Let them rest in the fridge covered for 24 hours.
Step 2: To The Smoker!

Preheat your smoker to 180 C degrees, using pellets of your choice. I used Traeger Hickory Blend, we enjoy the bolder smoker flavour that this creates. Once your smoker is at temperature take your pork chops out of the fridge and place them on the grill for 3 hours.
After 3 hours of smoking, you can either take them directly to the BBQ or put them in the fridge and do step 3 at a later date.

Step 3: Finish & Eat!
If you are coming right after the smoker to enjoy these for dinner that evening, let them rest for about 10 minutes before enjoying them with your favourite side.
If you are eating these at a later date, preheat your BBQ to 300C degrees. Once your BBQ is at temperature, reheat your pork chops for 5 minutes per side. Once this is done let them rest for 5 - 10 minutes and enjoy!

Whether your pork chops came from the grocery store, butchers or local farm this recipe is scrumptious! If you are a meal prepper (like myself) or doing this for dinner this recipe is easy. If you do not have a smoker just skip step 2 and go right to step 3 with your BBQ increasing your cook time by an additional 10 minutes, you won't be disappointed!
