Bacon Wrapped Beef Heart

Making bacon wrapped beef heart burst with flavour.



One of our favourite cuts out of venison during hunting season is heart. While everyone is still jacked from the experience and moment of getting the first deer or the hunting season, we take the heart and put it in a marinade overnight treating it similar to a steak. So when I found beef heart in the grocery store, I had to pick it up and see if it would be as good as venison heart.

Beef heart is not a common cut of meat that you hear people talking about. However those who do eat really enjoy it. It is a very tender and lean piece of meat. You have to treat it with a quick fry in a pan or grill like a steak. If it is over cooked it is tough and not enjoyable.


We like to slice the heart into a steak size piece, toss it in a marinade overnight, wrap it in bacon (everything's better with bacon) and a quick sear.

Ingredients


  • 2 tbsp Olive Oil

  • 2 tbsp Soy Sauce

  • 1 tbsp of Water

  • 1 tsp of Oregano

  • 1 tsp Montreal Steak Spice

  • 1 tsp Garlic Powder

  • Bacon (1 slice per piece of heart)



Prep time: 5 minutes Photo Credit: V.Gray

Marinade: 24 hours

Smoker time: 1.5 hours

BBQ time: 10 minutes

Rest time: 5 minutes



Step 1: Marinade


Slice the beef heart into steak-like pieces, we normally cut them 1" thick. In a container mix the olive oil, soy sauce, water, Montreal steak spice, oregano and garlic powder together, place the pieces in the marinade and flip it so both sides get covered. Place in the fridge overnight.



Step 2: Smoke!



Preheat your smoker to 190C degrees, using pellets of your choice. We use Furando Farms True North Blend, the hickory flavour in these pellets comes through nicely and is not overpowering. Once the smoker is at temperature place your heart pieces on the smoker, let them smoke for 1.5 hours at this temperature.

Step 3: Wrap It


If you are going to eat it that night or are doing meal prep, this step can be most important! Wrap your pieces of heart in bacon, while you preheat the BBQ to 300C degrees.

Step 4: Finish up


Once your BBQ reaches 300C degrees and put your bacon wrapped heart pieces on the BBQ. About 5 minutes a side, will crisp up, cook the bacon and reheat the heart. Once they are cooked, take them off and let them rest for 5 minutes while you finish off your side dishes.

Everything's better with bacon, even this beautiful lean and tender piece of meat gets elevated. This is a treat in our house when it is not hunting season, to prepare us for the fresh venison heart to come.
