Juicy and delicious beer can chicken 1/4's

Beer can chicken is one of the most popular ways to cook chicken on the BBQ and my Dad has always made the best beer can chicken. I love the taste the beer gives the chicken and how tender and juicy the chicken gets. However, sometimes we do not have the time for a full chicken or the crowd around to help us eat it. So I adapted this recipe for chicken 1/4's making something we could have for dinner throughout the week.
These spices pair perfectly with the beer and a nice BBQ sauce finished with crispy skin, who wouldn't want this for dinner?
Beer Can Chicken 1/4
Ingredients
Here is what you will need.

Chicken 1/4
Beer - your choice, we used Bush Lite
1 tsp of Seasoning Salt
1 tsp Chili Flakes
1 tsp Paprika
BBQ sauce - your choice

Fridge Time: 24 hours
Smoker Time: 2 hours
BBQ Time: 15 minutes
Rest Time: 5 minutes
Directions

In a container place your chicken 1/4's dusted in seasoning salt, paprika and chili flakes. Pour the beer in the container and place in the fridge overnight.

2. Preheat the smoker to 190C degrees. Take your chicken out of the fridge and place it on the smoker. Let the chicken smoke for 2 hours.

3. After 2 hours remove from the smoker and let cool down, you can store these in the fridge for 5 days before reheating. If you plan on having them for dinner that night, you can either turn your smoked up to 350C degrees and finish them on the smoker or move onto step 4.
4. Preheat your BBQ to 350C degrees, once the BBQ is at temperature place the chicken 1/4 (skin down) on the grill. Cover in your favourite BBQ sauce, after 5 minutes flip the chicken 1/4. After flipping, cover the skin side in BBQ sauce and let them cook for 10 minutes.

5. When you check the chicken 1/4 after 10 minutes the skin should be crispy and chicken ready to eat. Remove from the BBQ and let them rest for 5 minutes serving with your favourite sides.

As I said before sometimes you do not have a crowd or the time to do a full beer can chicken on the grill to make it worth it. We found this to be a great substitute that we enjoy in our weekly rotation for dinner.
